The Necessity of Extreme Heat
Wood fires are tended daily in our bell-shaped, brick oven to temperatures of over 800°F. This creates the legendary puffed-up, slightly charred, crisp and chewy outer crust and the delicious, melt-in-your-mouth, ultra-thin, soft center crust found only in Neapolitan pizza.
Hand-built in southern Italy, our brick wood-fire oven is the hearth of our home away from home. All tile and marble work was performed by local Torrington craftsmen.
